Ingredients:
- 1 cup Besan (Gram flour)
- 1 cup Ghee (Clarified butter)
- 1 cup Coconut (grated)
- 1 cup Milk
- 3 cups Sugar
- 1 cup Cashews (chopped)
- 1 teaspoon Cardamom powder
Instructions:
1. In a large pan, heat 1 cup of ghee over medium heat.
2. Add 1 cup of besan (gram flour) to the melted ghee and roast it on low to medium flame until it turns golden brown. Make sure to stir continuously to avoid burning.
3. Once the besan is roasted, add 1 cup of grated coconut to the pan and continue to stir.
4. Pour in 1 cup of milk slowly, stirring continuously to avoid lumps. Cook until the mixture thickens.
5. Add 3 cups of sugar to the mixture. Keep stirring until the sugar dissolves completely and the mixture attains a smooth consistency.
6. Now, add 1 cup of chopped cashews to the mixture and mix well.
7. Continue to cook the mixture on low flame, stirring continuously until it thickens and starts leaving the sides of the pan.
8. Once the mixture reaches a halwa-like consistency, add 1 teaspoon of cardamom powder for flavor. Mix well.
9. Grease a tray or plate with ghee and transfer the mixture into it. Flatten and smoothen the top with a spatula.
10. Allow it to cool for a few hours until it sets completely.
11. Once set, cut the mixture into square or diamond-shaped pieces to form the barfi.
