Recipe:
- 3 tbsp ghee
- 12 black pepper corns
- 1 star anise
- 4 cloves
- 1 dried red chilli
- 1 stick cinnamon
- 2 bay leaves
- 1 tsp cumin
- 1 black cardamom
- 2 green chilies
- 2 tsp ginger garlic paste
- 2 onions sliced
- 1 cup carrot cubed
- 15 fried cashews
- 1 cup French beans, chopped
- 1 tsp salt (adjust to taste)
- 1 cup soaked basmati rice
- 1.5 cup water
- 1 cup green peas
- 1 cup pan fried paneer
- 1/2 lemon juice
- Coriander for garnish
In a pressure cooker,
- Add ghee, whole spices and onion.
- Sauté until onions turn pink.
- Add ginger garlic paste & green chilies.
- Sauté for 2 minutes over medium heat.
- Add veggies and salt.
- Cook for 5 minutes.
- Add drained rice, water, peas, paneer, cashews and lemon juice.
- Gently mix.
- Pressure cook on high for 1 whistle.
- Let the pressure release naturally.
- Fluff the rice and garnish with coriander.
